Sushi gets intimate

Personally, I plop myself right at the sushi bar. There is something that amazes me about watching the chefs cut fish into perfect pieces, choose the appropriate fillings and garnishes and, perhaps most impressively, manage to get the rice to stick to the sheets of nori, or seaweed faster than I can place my order. I leave every time really full and satisfied, but also thinking that these are skills that are way beyond the reach of rank amateurs.
So I took to the internet and to my delight found out that sushi classes are available all over! At a recently class in Las Vegas taught by chef Martin Swift, students were first taught about the importance of sushi rice. While made before hand due to time constraints, students were briefed on how to handle the rice. Most important, is the control of water on the hands. Too much water means the rice won’t stick to the nori, but too little water and it’ll fly around the room. Next they were taught to pull the rice, never press or squash, across the nori, evening the edges and filling in any blank areas.
To finish prepping for the fillings, you sprinkle with toasted sesame seeds for color and flavor and because they help keep the rice from sticking to fingers. Then you’re ready to roll. Students watched as Swift flipped the sheet over, spread a little wasabi across the center, added crab sticks and avocado, lifted up on the mat, pressed down and rolled, but not entirely. Swift explained, “If you don’t see any nori, you’ve gone too far,” as he lifted the mat to reveal a perfect roll, sliding it to the end of the mat and evening the ends with his hands. You should be left with proper shape of a sushi roll- flat on the bottom and straight on the sides with a domed top.
