Delicious – Chicken Salad Recipe

Chicken Salad is bursting with flavours if made with the right recipe. You can eat chicken salad alone or you can pair it with sides likes lettuce, avocado; it can also be used for sandwiches. Besides chicken, chicken salad recipe can comprise of a variety of other ingredients such as bacon, sliced apples, peanuts, chopped peaches, seedless grapes, fruits, raisins, pineapples, hard cooked eggs, cucumber, peppers, English Peas, olives and a whole lot more. The flavours can also be tweaked by using different spices like cumin and curry.  Ingredients 4 cups diced poached chicken 1 stalk celery, cut into ¼ inch dice 4 scallions, trimmed and thinly sliced or ¼ cup sweet onion cut into ¼ inch dice 1 ½ teaspoons finely chopped parsley 1 cup prepared or homemade parsley  1 cup prepared or homemade mayonnaise 2 teaspoons strained freshly squeezed lemon juice 1 teaspoon kosher salt Freshly ground black pepper  Directions 1.In a mixing bowl, turn together the chicken, celery, scallions and herbs. Set aside. 2.In a small bowl, whisk together the mayonnaise, lemon juice, mustard, salt and pepper to taste. Add to the chicken and mix gently until combined. Refrigerate until ready to serve.  3.Serve on a bed of lettuce with sliced tomatoes, in half an avocado or in a chicken club sandwich prepared with artisanal bread, crispy smoked bacon, vine-ripened tomatoes and lettuce.  Poached Chicken for Salad 10 sprigs parsley 2 sprigs fresh thyme 1 small onion, halved 1 small carrot, cut into halves 1 stalk celery, cut into halves 3 pounds chicken breasts halves, on the bone and fat trimmed 5 to 6 cups chicken broth, homemade or low sodium canned Directions 1.Place parsley, thyme, onion, carrot, celery, and chicken breasts in a medium saucepan. Cover with the broth, and bring just to a boil. Lower the heat to very low and cover. Poach the chicken for 20 minutes or until firm to the touch remove the pan from the heat, uncover, cool the chicken in the liquid for half an hour. 2.Move the chicken to a cutting board and keep back the liquid. Bone and skin the chicken and cut the meat into 1 inch cubes. Throw away the bones and skin. 3.Pour off the broth and store, covered, in the refrigerator for 3 days of freeze until later use. Remove any fat from the surface of the broth before using.   This recipe yields 4 cups diced chicken or 4 to 6 servings.

Well said! Any chocolate lover loves all kinds of chocolate. They will taste any kind, for the most part. I won’t go for the chocolate covered locusts, though, I do draw a line at that. There is something bitter sweet about dark chocolate. It is bitter when it is pure dark, but still satisfying just the same. Dark chocolate was an acquired taste for me seeing that I had favored milk choclate mostly. However a slight intolerance to the sweeteners and milk in it turned me over to the dark side of it, and I found no problem as long as it was in moderation.

Dark Chocolate Delight

Dark chocolate, sometimes refered to as plain chocolate, is manufactured by adding fat and sugar to the cacao bean, without milk being added. Some would say milk contaminates the purity of the cacao bean. Perhaps they are right, I won’t argue though! If you are going to eat chocolate, then choose a dark chocolate candy bar or the same in smaller quantity. It is one of the many varieties of chocolate available today, not necessarily everyone’s favorite, but definately a healthy choice. You can purchase bars, truffles, drinks, and more. The awesome thing about this is, no matter what form you choose, you can still enjoy the health benefits of dark chocolate and the Chocolate Diet

There are quite a few different benefits offered by dark chocolate. Not only is it delicious, but for one it can be used to enhance moods. There should be a law to eat it on Monday mornings! Authentic Mexican Recipes

The food of the Central American country, Mexico, is rich in history, flavour, contract, texture and colour. Mexicans particularly the more affluent ones eat a varied diet of fresh meats, fish, shellfish, chicken, vegetables and fruits. Due to necessity, most foods are field fresh and never older than a couple days. Additionally due to cost considerations, pesticides and herbicides are used minimally and both fruits and vegetables are picked ripe or very close to ripeness. Mexicans only eat seasonal fruits and vegetables, never looking for anything out of season which would more than likely have to be imported from thousands of miles away. Almost all food consumed locally, except in Mexico City, the capital, is grown locally.

Authentic Mexican dishes should not be confused with North American Mexican-style fast food. While meals sold at places like Taco Bell mimic Mexican dishes it is not to be considered authentic Mexican cuisine.

Authentic Mexican Appetisers

1.Empanadas. Empanada is one of the most commonly known Mexican or South American snack food. It is a pastry crust or meat pie with a filling of beef and vegetables, ham and cheese. Other foods usually prepared in an oven, or sometimes fried can also be used as filling. 

2.Quesadilla. This is a Mexican snack food prepared with cheese on a folded corn or wheat tortilla and cooked until the cheese melts. Other ingredients like chicken, beef, ham or vegetables can be included in quesadillas as well. The word quesadilla is derived from the Spanish word literally translating to mean either cheese tortilla or cheesecake. 

Authentic Mexican Recipes Entrées 

1.Carnitas. This is a very common Mexican dish that consists of braised pork and can be eaten by itself or accompanied by tortillas, guacamole and salsa. Carnitas are used as a filling in tacos, taquitos and burritos. The pork is first simmered in boiling oil for a while to make it really soft and then braised in the oven to make it crispy.

2.Tamales. Tamale or Tamales are made with masa dough filled with meat, vegetables and spices, or fruit and wrapped in a corn husk or banana leaf and steamed until hot. 

Authentic Mexican Dessert

1.Tres Leches Cake. Pastel de Tres Leches or Three Milk Cake is a butter cake flavoured with vanilla. It is soaked in a mixture of three different milk products, hence Tres Leches. The three milks, when mixed together, create the right sweetness, density and texture of a rich cake, making it moist but not mushy.
